What I usually do is lease some relatively old planes from the used market, and then replace them with new planes once I'm in a secure financial position. Also, make sure you choose an aircraft type that you're going to lease a few of that is popular with other airlines: this way, you can usually find quite a few on the used market - but make sure the plane isn't too big for the kind of routes that you want to fly! I'd recommend the B737-300/400/500 if you're in that kind of era, otherwise, your best bet is most likely an a320. I tried flying some MD-83s and it didn't go too great, but I know they've worked for others. As for seating arrangement, I normally go for all Economy, but, again, it really depends on the kind of routes you want to fly. Hope this helped!
