Hubs allow you to get connecting PAX from your flights. So if you have an aircraft with 100 seats but the route only has a demand of 70 people the other 30 seats on the aircraft may be taken up by connecting passengers.

Another question. It seems that you cannot do flights between two nations that you did not start in. Do hubs allow this?

In open worlds [ O1 and O2 ] you can fly any routes from any country to any other country regardless of where you start.

No. But if you join an open world you can do that.

Hubs can allow you to build traffic solely based on connecting pax, even if there isn't any local traffic. The only theoretical limit is gate space. You could, for example, have over a billion connecting pax from one airport.
