I have tried everything, 5* turns out costing me a lot. Also, do pax care what services are included? or just the overall rating they look at.

I've found you can get a 4 star rating with food at level 2 and free, but it sinks to a 3 star rating with food at level 3 and free. Bug? I don't know. But it's an inexpensive way to hit a 4 star... If I have multiple cabins, I will use the four star for the smaller cabin and make a profitable 3 star in the main cabin, or some combination of the two. That way, I reap the small benefit of having a 4/5 star cabin but still turn a profit per route.

I can get about -$100 on 5*, I've heard of -80 but I'm not sure how to do it.

3* with profit is easily doable with chargeable snacks. Charging slightly above the going rate for a 2 star meal may also increase profits and bring in a 3 star profit if you provide stuff like free pillows and blankets. Passengers love those.
There is an exploit to get about $469 on 3 star.
