I see I'm using 80% of the gate time between my 2 gates at my current 2 airports. Does the schedule I've currently set up allow for time for the ground crews to do plane maintenance, or do I need to reserve some free hours per week for such plane maintenance? Because if the game already programs in plane maintenance time as part of each route schedule, then I can add 25% more flights (well, almost), and not damage my planes.

You don't need to leave any time for repairs at all. The game handles it.
Planes don't take damage or crash anyway.

that's why the maximum utilization per day is only 20 hours

You should be able to do more. I can have my planes operation 24 hours a day with one 6 hour B check every 2 weeks and about three A checks a week (2 hours) which equates to 22.71 hours of utilisation per day. ( I do this on Airline 7 in which you have to manually shedule your ACs maintenance and turn around times).
