Do really old aircraft in the game comsume more fuel or just maintanance cost increases?

The fuel cost increase is minimal for the first 20 years, the maintenance cost increase is rather steep, but payable until the aircraft reaches the age of 30.

its also necessary to not change the whole aircraft in a full game period

That is a double problem. As you most likely know, you will pay for maintainence, fuel, and lease termination fees if you try to save yourself some money.
