i wanted to buy a A330-300. when i go to custom seating the max seats i can add are 180, but it says 440 seats are the default.

When setting up custom seating, the first option is for first-class seating. Each first-class seats takes up more space. You could have 440 seats if the plane was set up entirely with economy seats.

As El Cobrador states, the first option is for first class. Leave this at zero and click next, then you'll get the option for business class. Leave this at zero and click next, and that'll give you the option for economy. If First and business are zero, you'll fit 440 economy seats in. If you have some first and business, you'll be able to fit proportionately less seats in.
Final note, first class seats take more space than business, which takes more space than economy.
