In the "Configure Aircraft Cabin Layout", it only says "F seats", "C seats" and "Y seats". Is it possible if we could name our own seats just for the nostalgia? Also, is it possible to include premium economy in the game too? Or maybe in AE 4?

Custom fare classes (which would allow Y+ if you wanted) are planned for AE 4. 
Also, in the future please post suggestions in the suggestions and feature requests forum.

I basically never look at general discussion. 
Anyway, 'good publicity' is hardly an excuse to annoy people when most everyone else uses suggestions...
