A city pair is just a route between two airports. Where are you seeing this?

The most simple way to say it is city pair = route. Each route has 2 "cities" (airports), the origin and the destination.
Nice route map by the way

the pin symbol "pins" the route. i.e. a pinned route will always appear at the top of your routes page
