The real rendang ... you need to journey to West Sumatra - the land of Minang. Some people use beef , some uses ox. Cook slow simmer for 7-8 hours so the meat is super tender. Now.. the spices... this is tricky. The original spices involve cumin, salt, pepper, clove, coriander, cinnamon, and chili. I don't how to mix them together. You can buy the instant spices in packet. But of course not original, but better than nothing.
yes, it must be cooked for 7-10 hours until the coconut milk become oily. but if we use modern tools, it reduce the time of cooking without sacrifice the taste at all. One important thing we must know is do not use garlic, use onion only. beef rendang and others minang food are very different ingridient compared with javanese food or celebes food.
