What does the hourglass on some specific routes mean ?

I believe it means that they are in queue to have their stats re-calculated. This often happens when I change my IFS settings.

yes, but not just IFS, its any sort of thing like price/demand change, new competitor, etc

When the hourglass appears and the route is highlighted in blue that means the route is queued for recalculation. You can also manually recalculate the route by clicking the Save button next to the price on the route page.
