Does anybody know of a place where I can find templates in vector format? I'm decent at doing designs in raster, but I switched to photoshop and I suck at it for the time being. I'd love to do them in Illustrator.

No clue where you could find vector templates, but I've considered making them myself. Definitely an interesting idea.

I have a vectorised TU-104 I've made myself. But my advice would be to just stick with Photoshop. It might be rough in the beginning but it pays off. Illustrator is super clunky to work with while applying liveries etc.
Being more comfortable in Illustrator myself too I normally create the complex livery components, titles, symbols etc. in Illustrator then use them as Vector Smart Objects in Photoshop.

I work with CorelDraw. If I may suggest, you just need the fuselage and tail parts for most of the templates.
I'd import them to Cdr, trace them if needed, work with the design, export everything to bitmap (.png), then put them all together with either Psd or PdN.
Maybe that helps.
