If you are a scamline, charge max price for the worst products. If you are looking for quality, have zero charge on the highest quality products.

Giving things away was how airlines competed because they had to charge the same price for the tickets under the law. If someone served steak and lobster and someone else served crackers.... well the ticket is the same price... who would you fly with?
If your goal is to simulate Pam Am going bankrupt, by all means... today... in 2018... the income for an airline's IFE/IFS is around 100$ per person on long haul flights. If you want to count baggage fees, as well as simulate the high cost of last minute flights... "scam line" IFS is as close to reality is as possible.

Interested in this topic as I can not find a way to make a profitable IFS that has more than 3 stars.

I use a free 5-star IFE that loses money for my airline with a scam IFS that earns money for my airline, and the IFS earns more than the IFE does but still maintains a relatively high IFS reputation.
