I have 120 currently and while they are quite young still I would still like to consider my options. Would be looking for aircraft that takes orders by 2007

There is nothing. Even in 2017, there is nothing. The 797 is due to be out in 2025, so you'll seriously have to wait until then.

Lease as many 757-300s as possible before production ends and defer as needed, is the only thing I can think of.

I'd lease the Boeing 757-200's as the offer longer range and I think is perfect for the MoM. The -300 can be compared with the Boeing 787-8 as they have near seating capacity however the -8 has the superior range.

I usually use the 787-8 or the 737-900ER to replace my older 757-200s and a 787-9, 767-300ER or A330-200 to replace my Boeing 757-300s

Hmmm, the in-game 757-200 outranges the -300 by a mere 75 miles. Messed up compared to real life but yeah, it's AE.
Assuming cowpacker all-Y:
The 752 burns 102.6 fuel per pax
The 753 burns 88.7 fuel per pax
I've needed the 752s for specific long and thin routes, as well as HND-YVR, HND-SEA, HND-PDX (shocking routes that work in a cowpacker 3-class layout) but the 753 is one of the most fuel-efficient plane in the game that I'm aware of and can be dumped pretty much anywhere regionally.

I can say that the Airbus A319-100 LR is on par with the Boeing 757-200 in range.. but carries like 100 less passengers I throw them basically anywhere lol

A321neo might be your best bet, but it doesn't come out till 2017. Possibly order new 757s before production ends in 2006?

Boeing hasn’t made anything between 2005 and 2025 to replace the 757.

Wait until the A320neo comes out. Until then, I’d try an A310.

A310s are older than 75s...

The A321-200 has near B757-200 capacity but probably not the range. That said, if you're stretching the 757 out to it's 4,000+ nm range, it's not going to be as efficient. I'd be thinking more A300 / B767 or up to A330 size by then.

The only replacement for a 757 is another 757.
I'm sorry, but that's just the truth.
The closest you can get is an Airbus A321 NEO or a Boeing 737-900ER for a -200. For the -300, a Boeing 767-200, a Boeing 787-8, or an Airbus A330-200 is the closest you can get.
Just bulk order a ton of 757s until their production ends and then maybe consider replacing these things.

Well, Depending on the age of your 757-200's, and the demand on some of your routes, I'd go with the A321neo. It might be a bit late, but it'd be a good replacement.
Apologies. Other than a less capacity, less range 737-900/ER, or the Original A321 series (around same capacity but not very bad range). Until 2025, the A321neo seems like the most relevant chouce.

Well, if you're a spammer, then the Tu-214 is great. Other wise, 737-900ER, and then MAX 9 is the way to go, 787-8 for longer range flights

The A321 is the only real replacement, unless you don't need long range, in which case the 737-900ER could be suitable.

It depends on what you are using them for. For long range, I'de switch to 787s (788), and for regional flights, I would try to switch to a smaller plane (such as a 737, A320fam, or even RJs). Honestly, a specific aircraft doesn't need to replace a fleet group, all you need is to replace the routes.
