It gives you more passenger demand (connecting pax, or the blue pax) when you open a route from or to that hub.

In real life Airline hubs or hub airports are used by one or more airliners to concentrate passenger traffic and flight operations at a given airport. They serve as transfer (or stop-over) points to get passengers to their final destination.

 

In the context of this game, constructing a hub enables a player or a fellow alliance member to potentially capture connecting passengers (aka "purple" passengers) - which can come from other alliance members' flights as well as other flights from your routes.

 

So think of a hub as an enabling feature that opens up a new type of passenger which behaves differently from the green passengers.  The number of purple passengers you can profitably pick up becomes huge over time (but might be only a few at first). So huge that you could construct 200 gate terminals at numerous airports, hub them all, and conceivably fill all  seats for every flight you place on routes that have hubs as endpoints.  

 

Is it worth it to expend all that virtual cash to have terminals and hubs?  Absolutely!  But, when you first start out, it is too expensive to construct hubs and terminals because you need lots of cash to build one, so you must wait until you have at least 10 planes all generating sufficient revenue and contributing to dop (daily operating profit) to stockpile the needed cash.
