I like small stress free airports, so knock intl which has a paltry 2 stands for aircraft, you could probably throw a stone from one side of terminal to the other, and its always a hoot getting in or out as its so exposed to the wind. Nuce friendly staff even the security and you can arrive 15 minutes before flight and still make it

I want to say Cork (ORK) because it's my home airport but Dublin T2 is awesome.

I'd say Amsterdam because it's indeed lovely, and the fact that it's the only European airport I've been to
