How do you even play this game considering everyone buys up used aircraft as soon as possible?

Just establish your routes and wait for your aircraft choice to get on the market. A319-100LR is popular but every couple of days I get abreak with them.

If you can't beat them, join them. Whenever you're playing, check the used aircraft market constantly, particularly as soon as each game-day changes, as this appears to be when it updates itself.
