what is the difference between maximum payload range and maximum fuel range?
and what does4,080 mi (4,800 max) in the range column mean?

The max payload range is the highest possible distance the plane can fly with the highest possible payload.
The plane can of course fly further but if you try to do that, you will quickly notice that the system starts to sacrifice payload to make the plane fly further than its max payload range.
