Good Day
I was wondering what would be the ideal seating arrangement for a 737-800 and a 757-200 that would increase the legroom during a flight while still having plenty of seats.
Thanks!

These are just general guidelines based off of demand proportions for AE and are not meant to be extremely realistic.

Boeing 737-800:
4F/16C/122Y or 18Y/124Y

Boeing 757-200:
4F/22C/154Y or 22/158F

If you want legroom, you can't have plenty of seats. Vice versa works too.

What Al says... also do some research on seatguru

If you are going down the 'increased legroom' route, you are obviously trying to play realistically - in which case, I would omit F class from your smaller narrow-bodies (738)
